Eating healthy is a challenge these days, and it shouldn't be. As a working mom, I completely understand the constant temptation to roll through a driv-thru eatery and have dinner taken care of after a long day, and I must admit that on occasion, I still fall pray to the hamburger whispers. Yet it is possible to take control of your lifestyle and get on track to eating right and providing your family with the very best food there is. Growing your own edible gardens is the first step. But what happens when you suddenly find yourself with an abundance of veggies? These recipes were born out of the necessity to use what I already had on hand, and improvise the rest. Enjoy!
